Banana Roll Ups

We've partnered with Eating Bird Food to bring you a delicious smoothie recipe for those hectic mornings!

Servers: 2

Prep time: 10 minutes

No one will ever be able to tell that this sweet chocolate smoothie has hidden veggies! The frozen zucchini adds a creamy texture and helps thicken the smoothie while also adding lots of nutrients and fiber.

For the frozen zucchini chunks, you can chop and freeze raw zucchini or chop and steam your zucchini, let it cool and then freeze! I like doing this as part of my meal prep so the zucchini is frozen and ready for smoothies throughout the week.

Ingredients

-2 frozen bananas

-1 cup frozen zucchini (raw or cooked)

-1 Tablespoon cocoa powder

-2 Tablespoons nut or seed butter

-1 cup milk

-cacao nibs, for topping (optional)

Directions

Add all ingredients into a high powered blender and blend until smooth and creamy. Top with cacao nibs if you’re making this for yourself or leave them out for the kiddos. They might be a bit too bitter for little ones!
